Love soup and trying new recipes? BBC Good Food has the perfect suggestion for your foodie adventures: a Bolognese soup. Yes, you read that correctly.

Ingredients:
2 teaspoons of rapeseed oil
3 chopped onions
3 large diced carrots
2 diced celery sticks 
3 chopped garlic cloves
250g of minced beef 
500g of tomato sauce
1 tablespoon of powdered vegetable stock
1 teaspoon of smoked paprika
4 sprigs of fresh thyme
100g of wholemeal penne
45g of grated Parmesan 

Preparation: 
1- First, heat the oil in a large non-stick frying pan and fry the onions for a few minutes. Then, add the carrots, celery and garlic and fry for five minutes, stirring until the vegetables begin to soften.
2- Add the meat and mix so that it breaks up as it cooks. Once browned, add the tomato sauce and powdered stock with 1.3 litres of boiling water. Then, add the paprika, thyme and a little black pepper. Cover the pan and simmer for 15 minutes.
3- Add the pasta and cook for 12 to 15 minutes. Mix in the cheese and then serve the soup in bowls. Add extra cheese on top if desired.
