Love a salad that's loaded with delicious ingredients? Take a cue from Martha Stewart and make this one with salmon, eggs, peas and potatoes. Enjoy!

Ingredients:
8 anchovy fillets, packed in oil
1 teaspoon Dijon mustard
1 teaspoon grated lemon zest plus 3 tablespoons fresh lemon juice
1/2 cup plus 2 teaspoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
12 ounces very small new potatoes
1 pound skin-on salmon fillets
12 ounces frozen petite pois (sweet peas)
6 large eggs
3 cups trimmed watercress

Instructions:
1- Mash the anchovies with a fork in a small bowl. Stir in the mustard and 2 tablespoons of the lemon juice. Gradually whisk in 1/2 cup of the olive oil. Season with salt and pepper.
2- Cover the potatoes with water in a medium saucepan. Add 1 tablespoon salt. Bring to a boil. Reduce the heat to medium-low and simmer until tender, about 12 minutes. Drain. Let cool slightly, then halve the potatoes.
3- Preheat a grill to medium-high. Lightly brush the salmon with olive oil and sprinkle with the lemon zest, the remaining 1 tablespoon lemon juice, and salt and pepper. Brush the grates with olive oil, then place the salmon on the grill, skin side down. Grill until cooked through, about 6 minutes. Transfer to a platter.
4- Place a wire rack on a baking sheet. Toss the peas with the remaining 2 teaspoons olive oil and transfer to the rack. Grill, tossing occasionally with tongs, until heated through, 3 to 5 minutes. Transfer to a bowl.
5- Bring a large saucepan of water to a boil. Add the eggs and cook at a gentle boil for 8 minutes. Drain, peel, and halve the eggs.
6- Pour half of the dressing into a large serving bowl. Add the potatoes and toss to coat. Add the watercress and toss again. Break the salmon into large pieces and add to the bowl. Top with the eggs and peas and serve, passing the remaining dressing at the table.
