Ingredients:
8 ounces fresh egg tagliatelle or 6 ounces dried egg tagliatelle
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
3 large eggs, lightly beaten
¼ cup chopped fresh herb mixture, such as whole parsley leaves and chopped chives
Instructions:
1- Cook pasta in a large pot of salted boiling water until al dente. Reserve 1/4 cup pasta cooking water; drain pasta and discard remaining water.
2- Melt butter in a large nonstick skillet over medium heat. Add eggs and 1/2 teaspoon salt and cook, undisturbed, for about 30 seconds. Remove from heat and stir a few times to break eggs into large curds. Eggs should be very wet and undercooked.
3- Immediately add hot pasta and herbs to skillet. Season with pepper and toss to coat pasta evenly with sauce and herbs. If needed, add reserved pasta water, a little at a time, to lightly coat pasta. Divide pasta between 2 plates and serve immediately.
