It's a great idea to include eggs in your first meal of the day. Why? They're packed with protein and other nutrients that will keep you feeling full and energised for the day ahead. Convinced? Then give this recipe a go and make yourself some delicious spinach and yogurt eggs. It's courtesy of BBC Good Food.

Ingredients:
1½ tbsp olive oil, plus extra for greasing
2 leeks, sliced
2 garlic cloves, sliced
½ tsp coriander seeds
½ tsp fennel seeds
Pinch of chilli flakes, plus extra to serve
200g spinach
2 large eggs
2 tbsp Greek yogurt
Lemon wedges, to serve
Method:
1- First, heat the olive oil in a large frying pan. Add the leeks and a pinch of salt to the pan and cook for 10 mins. Stir in the garlic, coriander, fennel and chilli flakes. Once the seeds start to pop, add the spinach and turn down the heat. Stir everything together until the spinach has wilted and reduced, then scrape to one side of the pan. Add a little more oil to the pan, then crack in the eggs and fry until cooked to your liking.
2- Mix the yogurt into the spinach mixture and season to taste. Divide between two plates, top with the fried egg, squeeze over a little lemon juice and season with black pepper and extra chilli flakes, to serve.
