Strawberry season calls for this tasty cheesecake
It doesn't even need to go in the oven. It will gain the desired consistency in the refrigerator.

Strawberries, strawberries and more strawberries. It is their season and it is likely that you feel like making several recipes with this fruit. If you are lacking ideas, how about this cheesecake from 'The Pioneer Woman' website?
Ingredients:
For the base
16 digestive biscuits
1/2 cup of brown sugar
10 tablespoons of salted butter
For the filling
1 and 1/4 cup of cream
1 teaspoon of vanilla extract
3 packages of cream cheese
1/2 cup of sugar
1 teaspoon of lemon zest
2 teaspoons of lemon juice
1 package of strawberry gelatin
6 tablespoons of boiling water
1 and 1/2 cup of chopped strawberries
Preparation:
1- Start by making the base. In a food processor, place the biscuits and the brown sugar. Gradually, add the melted butter. Add the biscuits to a tart base. Place in the freezer for 20 minutes.
2- In a mixer, combine the cream and the vanilla. Beat for two minutes and add the cream cheese. Beat for a few more minutes.
3- Add the sugar, the zest and the lemon juice and beat again. Mix the gelatin with the water and place in the previous preparation.
4- Remove the base from the freezer and place the filling on top. Place in the refrigerator for a few hours and it is ready to serve. When serving, add the fresh strawberries.
