As soon as you finish boiling the potatoes, do you drain the water and put them on the table to eat? The truth is that you should wait two hours before eating them. There are several benefits that you will receive.

According to the dietician Sandra Moñino, in statements to La Voz de Galicia, it is not the same for the organism if you eat hot or cold potatoes. This is one of the foods richest in starch and it ends up being beneficial to convert it into resistant starch.

It is a type of starch that reaches the intestines intact. “These carbohydrates end up having a lower glycemic index compared to foods that are not consumed chilled, all due to the greater amount of fiber in this starch”, she explains.

Converting starch into resistant starch is a simple process. After cooking the food, you just have to wait at least two hours. Sandra Moñino says that it is something that you can do with potatoes, but also rice, some vegetables, oats and sweet potatoes.
