Ingredients
3 eggs
5 tablespoons of oatmeal flour
5 tablespoons of plain or orange-flavored yogurt
1/2 teaspoon of baking powder
Juice of 1 orange or clementine
Orange/clementine zest
Powdered sweetener (optional) or 1 ripe banana

Preparation method:
1- In a bowl, pour the oatmeal flour, yogurt, baking powder, egg yolks, sweetener or banana and mix.
2- Add the juice and zest of orange/clementine. Then, stir.
3- Beat the egg whites separately.
4- Add the egg whites to the batter, mixing everything gently, without deflating.
5- Place the mixture in silicone molds and bake in a preheated oven at 200ºC for about 30 minutes. You can also use the 'air fryer', at 200ºC, for 15 minutes.
