Out of dinner ideas? Fear not. Nutritionist Iara Rodrigues suggests an incredible healthy chicken pie.

Ingredients:
1 free-range chicken
1 leek
1 onion
4 cloves of garlic
Salt to taste
Pepper to taste
1 bay leaf
Olive oil to taste
80 g of whole wheat or spelled flour
Nutmeg to taste
Fresh coriander
1 lemon
For the dough
450 g of whole wheat or spelled flour
150 ml of chicken broth
Salt to taste
Olive oil to taste
1 egg for brushing

Preparation method:
1- Boil the chicken in a pan with water, the dark green leaves of the leek, salt and the bay leaf for an hour over low heat. 
2- Drain the chicken and remove the skin and bones. Then, shred the meat.
3- Strain and reserve the cooking broth.
4- Peel the onion and garlic cloves. Chop the onion and garlic. 
5- Then, chop the leek and brown everything in a saucepan with a drizzle of olive oil.
6- Add the chicken, stir, add about 100 milliliters of the broth and sprinkle with flour. Stir and let it thicken, stirring frequently. If necessary, add more broth.
7- Season with a little pepper and nutmeg, add a handful of chopped coriander and drizzle with lemon juice. The filling should be creamy.
8- Remove from heat and let cool. 
9- Preheat the oven to 180ºC.
10- To prepare the dough, mix the flour with the salt, make a hole in the middle and add the olive oil and the cooking broth. Stir to combine and knead on the counter until the dough is smooth and elastic.
11- Wrap in plastic wrap and let rest for a while. 
12- Reserve 1/3 of the dough. With the rest, line a baking dish. 
13- Spread the filling over the baking dish, cover with the remaining rolled out dough and seal the edges well, brushing the surface with the beaten egg.
14- Finally, bake for about 45 minutes or until the pie is cooked.
