Ingredients:
2 1/2 cups blueberries, raspberries and/or sliced strawberries
2 to 3 teaspoons honey
3/4 cup nonfat milk
1/2 cup all-purpose flour
1 egg
1 tablespoon canola oil
2 teaspoons sugar
1 teaspoon grated lemon peel
1/2 cup mascarpone cheese
2 tablespoons honey
Preparation:
1- First, in a medium bowl, combine the fruit and the honey. Toss to coat and set aside. Then, in a medium bowl, whisk together the milk, flour, egg, oil, sugar, and lemon peel. Whisk until smooth.
2- Next, heat a lightly oiled skillet over medium-high heat. Remove from heat. Pour 2 tablespoons batter into the center of the skillet. Lift and tilt the skillet to spread the batter evenly. Return to heat and cook the crepe for one to two minutes. Remove the crepe when set. Repeat with the remaining batter, greasing the skillet occasionally.
3- Finally, in a small bowl, combine the mascarpone cheese and 2 tablespoons honey. Spread one side of each crepe with 1 tablespoon of the cheese mixture. Fold the crepe into quarters. Serve with the berry mixture. Garnish with additional lemon peel, if desired.
