Ingredients:
3 large egg whites
Coarse salt and ground pepper to taste
1 teaspoon olive oil
1 cup spinach
¼ cup cottage cheese
2 tablespoons grated Parmesan
Preparation:
1- Beat the egg whites until stiff with a tablespoon of water. Season with salt and pepper and set aside.
2- Then, in a medium nonstick skillet, heat the olive oil over medium/high heat. Add the spinach and season with salt and pepper. Cook for one minute. Add the egg whites. Cook until almost done, using a flexible spatula to pull the sides of the omelet to the center, as the uncooked egg whites run underneath. Do this for one to two minutes.
3- Place the cottage cheese on top of the omelet, add the Parmesan on top and season with salt and pepper. Place the omelet on a serving plate, folding it over itself, tilting the skillet slightly.
