Ingredients (serves six):
100 g of whole wheat flour (50 g of oats and 50 g of whole spelled)
30 ml of olive oil
50 ml of water
Cinnamon to taste
40 g of cornstarch
300 ml of milk
1 lemon peel
2 tablespoons of honey
1 egg
Preparation method:
1- Start by preparing the pastry dough. Mix the flours with the olive oil, water and a teaspoon of ground cinnamon. The goal is to form a homogeneous dough that comes off your hands.
2- Divide the dough into six and, with the help of a rolling pin, form the bases of the pastries and place them in the molds.
3- Prick the bottom with a fork.
4- Bake in a preheated oven at 180ºC for 10 minutes.
5- For the filling, mix the cornstarch with the milk and beat with a wire whisk until there are no lumps.
6- Then, put the mixture in a saucepan, add the lemon peel and bring to a boil, stirring constantly.
7- Then, add a beaten egg and the two tablespoons of honey.
8- Wrap the dough and divide it into six molds.
9- Bake for another 15 minutes.
10- Finally, let cool.
