Ingredients:
680 g of peeled shrimp
Coarse salt and ground pepper to taste
1 tablespoon cornstarch
2 tablespoons oyster sauce
2 tablespoons safflower oil
4 celery stalks and more celery leaves to serve
1 teaspoon grated garlic
1 tablespoon grated ginger
1 pinch red pepper flakes and more to serve
½ cup toasted cashews
Steamed white rice to serve
Preparation mode:
1- Dry the shrimp with napkins. Mix with 1/2 teaspoon salt and 1/4 teaspoon pepper. Then, in a small bowl, mix the cornstarch, oyster sauce, and 3/4 cup water.
2- Then heat a large skillet over high heat. Add the oil and then add the shrimp in a single layer. Cook, without stirring, for one minute. Continue cooking, stirring occasionally, for one to two minutes. Add the celery, garlic, ginger, and red pepper flakes. Cook, stirring constantly, for one minute. Then add the cornstarch mixture, stir to thicken the sauce and cover the shrimp and vegetables. Add another minute. Add the cashews.
3- Serve over rice, topped with celery leaves and more red pepper flakes.
