Want something sweet? Make a mini passion fruit pudding
It is a simple, delicious and perfect dessert for when you are alone.

When you fancy something sweet and don't want to spend too much time in the kitchen, you can (and should) bet on recipes like this passion fruit pudding. It's very simple. Just follow Olive's instructions.

Ingredients:
For the pudding
2 passion fruits cut in half
100 g of butter plus extra for the molds
100 g of refined golden sugar
1 grated lemon
2 eggs
100 g of flour with yeast
Ice cream or cream to serve
For the passion fruit syrup
4 passion fruits cut in half
2 tablespoons of refined sugar
Preparation method:
1- Turn on the oven to 180ºC. To make the syrup, remove the pulp and seeds from the four passion fruits and place them in a small saucepan, add the two tablespoons of refined sugar and two tablespoons of water and boil until you get a syrup.
2- Butter four 150 ml metal pudding molds. To make the puddings, remove the pulp from two passion fruits, pass it through a sieve and discard the remaining seeds. Beat the butter, 100 g of sugar and the lemon zest in a food processor to obtain a light and fluffy cream. Add the eggs, one at a time, and the passion fruit pulp. Then add the flour and mix to obtain a homogeneous mixture.
3- Divide the mixture between the molds and place them in a small baking tray. Pour water from a kettle into the tray up to one centimeter above the molds. Cover the entire mold with a sheet of aluminum foil and bake.
4- Bake for 25 to 30 minutes.
5- Unmold and pour the sauce over it. Serve with ice cream or cream.
