Feeling lazy and uninspired at breakfast? You can (and should) make a simple but foolproof avocado toast. EatingWell has you covered with everything you need to know. You can add toppings like an egg, cheese or even smoked salmon if you like.

Ingredients:
½ small avocado
½ teaspoon lemon juice
⅛ teaspoon salt
⅛ teaspoon freshly ground black pepper
1 slice whole-wheat toast
½ teaspoon extra-virgin olive oil
Sea salt or crushed red pepper for garnish (optional)
Instructions:
1- Combine the avocado, lemon juice, salt and pepper to taste in a small bowl. Use the back of a fork to mash until smooth.
2- Spread the avocado mixture on a slice of toast. Drizzle with olive oil and sprinkle with sea salt and/or crushed red pepper, if desired.
