Ingredients:
For the tomato sauce
35 g of chopped onion (1/2)
300 g of tomato (4)
15 g of tomato pulp (1 cup)
240 ml of dry white wine (1 cup)
10 g of honey (1 teaspoon)
1 bay leaf
Oregano to taste
Thyme to taste
Fleur de sel to taste
For the base
350 g of cauliflower
300 g of eggs (5 M)
40 g of 'light' mozzarella cheese (1 cup)
14 g of parmesan cheese (2 tablespoons)
Fleur de sel to taste
Pepper to taste
For the filling
150 g of cherry tomatoes
80 g of sun-dried tomatoes (1/2 cup)
10 g of 'light' mozzarella cheese (1/4 cup)
6 g of sliced garlic cloves (2)
Basil leaves
Preparation method:
1- For the tomato sauce, add all the ingredients, except the oregano and thyme. Then, bring to a boil, without sautéing, until it is ready.
2- Then, blend and set aside.
3- To prepare the pizza base, preheat the oven to 200ºC. Grate the cauliflower and microwave for eight minutes.
4- Let it cool and mix with the eggs and grated cheeses.
5- Season with fleur de sel and pepper to taste and mix well.
6- In a pizza pan, lined with a sheet of parchment paper and greased with olive oil, pour the mixture and bake for about 15 minutes.
7- Then, cover the pizza base with the tomato sauce and the 'toppings'.
8- Finally, add the oregano and fresh basil leaves.
