Ingredients:
¾ cup chopped dates
1 cup creamy natural peanut butter
½ cup rolled oats
¼ teaspoon salt
½ cup chopped unsalted roasted peanuts
¾ cup dark chocolate chips

Preparation:
1- Place the dates in a medium bowl and cover with hot water. Let stand for 10 minutes. Drain the dates, reserving the water.
2- Line an 8-inch square pan with parchment paper, leaving a 2-inch overhang on two sides. Spray the paper with cooking spray.
3- Combine the dates, peanut butter, oats and salt in a food processor. Process until the mixture is finely chopped and begins to clump together. If the mixture seems dry, add some of the reserved soaking liquid, 1 tablespoon at a time. Transfer to a medium bowl and stir in the peanuts. Press the mixture evenly and firmly into the prepared pan.
4- Place the chocolate chips in a bowl and microwave on medium power until melted, about 2 to 3 minutes. Pour the chocolate evenly over the oat mixture. Refrigerate for at least 1 hour. Remove from the pan. Cut into 16 squares.
