The Israeli military said troops arrived at the scene and pulled the attackers off the truck driver, providing medical treatment to the victim.
The military said the protesters also attacked the troops, lightly wounding two officers and a soldier. The truck was carrying ordinary commercial goods and not aid for Gaza, according to Israeli media.
Trucks carrying humanitarian aid began arriving at a newly built temporary dock constructed by the U.S. military off the coast of the Palestinian enclave on Tuesday, as Israeli restrictions on border crossings and heavy fighting have prevented food and other supplies from reaching civilians in Gaza by land.
U.S. officials said the shipment was the first in an operation that could see up to 150 trucks a day delivering aid to the Gaza Strip.
No food has entered Gaza through its two main southern crossings in more than a week. About 1.1 million Palestinians are on the brink of starvation, according to the United Nations.
More than 35,000 people have been killed in Gaza during the seven-month war, most of them women and children, according to Hamas health officials.
The war began on July 8 when the Hamas militant group attacked southern Israel, killing about 1,200 people, mostly civilians, and taking about 250 hostage. Israel says the Palestinian Islamists are still holding about 100 hostages and the remains of more than 30 others.
